The meeting with Nicolas Secondè, a French oenologist specializing in sparkling wines, shaped a precise vision: to enhance the potential of Taburno in the production of Metodo Classico.

Among soils varying in composition and altitude, the ideal conditions for fresh, structured, and identity-rich bases are defined.

The harvest is guided by rigorous selection, followed by soft pressing and separation of the musts. Fermentations, at controlled temperatures, preserve integrity and aromatic purity, yielding bases distinguished by finesse and minerality.

Blending represents the key moment: balance, depth, and stylistic coherence take shape through a careful selection of the cuvées.

The secondary fermentation takes place according to the Metodo Classico, with a long aging on the lees which imparts complexity, elegance, and persistence.

A shared vision, between the consultant, Nicolas Secondè, and Raffaele Di Marco, the company's technical director, where expertise and experience define an authentic and contemporary style.
