Exposure and altimetry: Lands facing south-east ; Hilly terrain at 400-650 meters

Breeding system: espalier with Guyot pruning
Plant density: 3500 vines per hectare
Harvest time: first ten days of September, management of the
hand-picked in small containers
Winemaking technique: The grapes are harvested before they are fully ripe, preserving the varietal's aromatic freshness. Once they arrive at the winery, the whole grapes are gently pressed, and the first fraction of free-run must is fermented at low temperatures. The resulting base wine is refermented in a pressure tank using the Charmat method.
Maturation: After the secondary fermentation, the sparkling wine undergoes a short refinement on the yeasts (sur lies)
Organoleptic characteristics: Straw yellow in color with distinct greenish highlights, a rich and persistent perlage. The nose is pleasantly complex, revealing the varietal aromas balanced with hints of yeast (bread crust). The palate is fresh, with good aromatic persistence.
