Ox Apis Aglianico del Taburno DOCG

Bue Apis is produced exclusively with Aglianico del Taburno grapes from a century-old vineyard located in the "Pantanella" district, about 1,000 meters from the Taburno winery. This vineyard testifies to the ancient presence of Aglianico on the slopes of Mount Taburno.

The pure vinification of the grapes obtained from it, the original clone of the so-called bitter Aglianico, is one of the paths that the Cantina del Taburno has undertaken to enhance the extraordinary potential of this ancient vine.

Exposure and altimetry: hilly terrain at 350 metres above sea level facing south-east

Type of soil: calcareous clay marl

Breeding system: free spokes

Harvest time: first ten days of November, manual harvest in small containers

Winemaking technique: The grapes, harvested when fully ripe, are destemmed and pressed and fermented for 40 days at a controlled temperature. The resulting wine ages in oak and chestnut barrels.

Organoleptic characteristics: The color is purple-red. The aroma recalls blackberry or blackcurrant jam. On the palate, it is voluminous and balanced with melted tannins and a long finish of roasted coffee, tobacco, and spices.
